Yeah different people have different taste:-)
I got Stellaris at launch and really liked it and play it a lot still, so I bought all DLC and expansions when they came out.

For a new player I think the current bundle is a good idea to try out Stellaris(and the other games, but I havent played them yet). The base games got updated in a lot of patches since release and should have enough content to play it for many hours for those that like that kind of game. Then if you like it and play it a lot the new update will be out and then if you still play it you can look at the different DLC and expansions , maybe on sale.
