Seems like Aspyr Media actually did a pretty good job on this one, with STAR WARS: Bounty Hunter now available on GOG and Steam.
Early reports from Steam reviews are giving it a Very Positive rating, a pretty stark comparison to the mess that was STAR WARS: Battlefront Classic Collection at launch which is still at Mostly Negative on Steam. Nice to see a remaster like this hit the mark.

It's Steam Deck Verified with Proton 9. So you'll be good to go on Desktop Linux with Proton 9 as well.

No. It used to be called Bundle Stars, but it's been a few years now since they renamed.
SW Outlaws would have been nice as a make-your-own bounty hunter sandbox SW game but instead its another forced narrative game which I feel Disney is honestly not understanding the playerbase with. Why make a big open-world game but not sandbox some of it?

I think from a business perspective it's not viable for them to invest in a Linux version when the game runs fine in Wine (and probably better in the long run).

Yeah, I expected these porting companies to stop making native Linux versions once Wine reached quality level that it has now. I.e. dxvk / vkd3d-proton commoditized MS graphics APIs translation that there is no money in doing it as a service. Note that their efforts were lost to the larger Linux world since their technology was never open sourced.
Companies like Collabora are more productive in actually advancing many areas of the Linux ecosystem in a way that helps gaming too (and Wine too by the way). It's good they find ways to get paid for it somehow.

I remember finding it pretty interesting as a kid (you get to be a cool bounty hunter, and a jetpack, and a flamethrower, and poison darts, and…). I don't know if anyone would call it one of the great Star Wars games, but it seemed fairly solid in design and competently executed, though who knows what I'd think of it now. Reviews on Steam are currently sitting at "very positive", for what that's worth. Maybe I'll pick it up and give it a try now that it has proper mouse and keyboard support.
