I have a System 76 Lemur laptop now running Ubuntu Studio 20.04 with Wine 5.0.3.
I have been able to get apps like Ableton lite and Serato DJ
for audio working with AKAI MIDI keyboard and Numark USB DJ controller
and decided to try with similar strategies for 7.1 headphones designed especially for games.
First choice was Turtle Beach Stealth 450 USB wireless headphones.
I see USB drivers in WINE are a work in progress this April so wondered who
can help get my test for 7.1 surround in native apps and games.
I saw the April 2020 article that suggested USB drivers may work in WINE but not sure if the
headphones switch hardware to 7.1 or driver generates the 7.1 as a virtual effect.
I am using Ubuntu Studio 20.04 LTS low latency which only has wine 5.0.3 in repository.
Is there a repository to add to apt sources for wine 5.7+ to get in on the development and try to get my
Turtle Beach Stealth 450 headphones working in 7.1 ?
I hope I could start with native Linux if the stereo headphone hardware could be switched to 7.1
but that seems to need Windows driver to toggle the feature.
I have used the control center in Ubuntu Studio 20.04 sound config for multiple HDMI choices including 7.1
but only shows single Turtle Beach Stealth 450 configuration for stereo 2.0.
The Numark DJ Controller is showing single choice for analog surround 4.0 used
for mapping 2.0 to master speakers plus 2.0 to headphones.

I use it on a Xonar SE sound card that is recognized as a USB card.
You can change up the mapping config to 7.1 and give it a try.
But I have never used a headset for gaming so I cant promise anything.

I looked at the dcaenc link but that is an encoder path which
which but will have no destination unless my headphones recognize the encoding.
I need to determine if the headphones do native surround or require a driver to convert 7.1 to stereo speakers.
The control panel settings don't offer it as it is not enabled by the existing driver.
HDMI 7.1 is a
setting available by default but needing a pulse audio path work around.
