As for the game itself, for me it's starting in fullscreen just fine but, with Proton 9 (9.0-1 and GE-Proton9-6), it will minimize itself after the intro, and won't properly open after. Changing Proton to Proton 8 (GE-Proton8-32) fixes everything for me. In Wine (Lutris's wine-ge-8-26) the game works fine from the start.
Yes, my problem is not the same as yours so I can only offer a general advise to try different Proton version (or Lutris, if you have the game on GOG).

You can install GE-Proton using ProtonUp-Qt. I recommend using the AppImage version. Quick and easy to download and run. You just have to make the file executable first (most Linux file managers can do this from the file's Properties, under the Permissions tab).
For KotOR, I installed the equivalent of GE-Proton8-27. The only other tweaks I had to do was to disable Frame Buffer Effects, Soft Shadows and Grass, as was recommended in a GOG thread (link below). You won't be able to run it in widescreen without external tools (wasn't worth the trouble for me).
GOG: KotOR on Linux by using Wine
Unlike Trias, I have encountered no problems running it in both Pop!_OS and Linux Mint XFCE. I have even been able to install graphics mods. As mentioned, I never tested running it in widescreen.
