Any idea whats wrong? I installed jdk-openjdk 23(latest). Does Minecraft need a specific Java version or whats the issue here?

+1 for the Prism Launcher (which also has a Flatpak installer; and as Liam notes it takes care of dependencies, mods, data packs, etc. while giving you the option to install various options beside the defaults through easy to navigate menus.).
Minecraft just became compatible with Java 21, though; so Java 23 might well be the issue here.
